CYCLE SYNCING SEED MACAROONS - Sun Potion

SEED MACAROONS, TWO WAYS

Two seed macaroons, built around the practice of eating with the rhythm of the month.

There are four phases to the monthly cycle — follicular, ovulation, luteal and menstrual. Throughout each phase we go about caring for our bodies a little differently. We get to eat differently, exercise differently and work differently if we listen. My intention when creating new recipes is now based on which phase I am currently in and what my body is asking for.

Lemon Poppy Seed Moon Macaroon

(One for the earlier part of the month)

These zingy, sweet, melt-in-your-mouth macaroons are built on flax and sunflower seeds, with a shortbread texture thanks to the GF oats. A hint of lemon, poppy seed and vanilla awakens the senses.

Ingredients

1/2 cup ground flaxseeds

1/2 cup pumpkin seeds

1/2 cup GF oats

1/4 cup shredded coconut

1 tsp. poppy seeds

1/2 tsp. vanilla bean powder

1/4 tsp. salt

3 small dates (optional)

1/2 cup coconut butter, plus extra for coating

1/4 cup cashew butter

1/4 tsp. lemon oil extract

1/4 tsp. Sun Potion Pearl powder

1 tsp. Sun Potion Yin Power

Method

In a food processor or blender, mix together your flaxseeds, pumpkin seeds, GF oats, shredded coconut and dates

Blend until coarsely mixed, then sprinkle in your poppy seeds, Sun Potion powders if you have them, and then your vanilla, salt and lemon oil extract

Melt your coconut butter in a small pot on the stove, or if it is sealed let the jar sit in warm water (I love to use my hands for mixing in the cashew butter and the coconut butter)

Let it all come together until it forms a ball

Break it into smaller round moons and place them on a pan

Drip the extra coconut butter over your moons to coat them and sprinkle fresh lemon zest on top

Let them harden in the fridge and enjoy

Carob Mexican Hot Cocoa Macaroon

(One for the later part of the month)

These are everything and more when a chocolate craving arrives. Gently sweetened with dates and full of nourishing seeds — sesame and sunflower give a nutty, buttery flavour while the splash of carob coating sweetens the whole thing.

Ingredients

1/2 cup sesame seeds

1/2 cup sunflower seeds

1/2 cup GF oats

1 tbsp. chia seeds

1/2 cup carob morsels

3 small dates (optional)

1 cup coconut butter, plus 1/2 cup for topping

1 tsp. Sun Potion Anandamide

1 tsp. Sun Potion Yin Power

1/4 tsp. salt

sprinkle of pine pollen

Method

In a food processor or blender, mix together your sesame and sunflower seeds, GF oats, chia seeds and dates

Blend until coarsely mixed, then sprinkle in your Sun Potion powders if you have them, and then your salt

Melt your coconut butter in a small pot on the stove, or if it is sealed let the jar sit in warm water

Let it all come together until it forms a ball

Break it into smaller round moons and place them on a pan

Melt your carob morsels on the stovetop with the remaining coconut butter, then coat your moons

Let them harden in the fridge and enjoy

What is the difference between the two?
