So many ways to make tasty tacos! I used to live in the jungle on an island in Bocas Del Toro, Panama. There I learned how to make so many delicious dishes. I worked at an eco lodge with local Indigenous Panamanians, the Ngobe people. The ladies taught me so much about their language and their food! Hilda taught me Mole, which takes all day to make in order for the spices and flavors to synergize. This recipe is very much an adaptation of a traditional mole, infused with some adaptogenic mushrooms for depth and earthiness.

Frequently Asked Questions
What makes this mole vegan?
Cashews and almond butter build the body that would traditionally come from lard or stock, and raw cacao carries the classic mole depth.
Do I have to cook the mole?
No. This is a blender adaptation — everything goes in raw and blends to a thick sauce. Add water a little at a time to loosen it.
Why add Reishi and Lion's Mane to a savoury sauce?
Reishi and Lion's Mane both bring an earthy, savoury note that suits cacao and chili particularly well.
How long does the mole keep?
Several days in an airtight container in the fridge. It thickens as it sits.
