BANANA AND MUCUNA NICE CREAM

Ingredients

Mucuna Banana Nicecream 

1/2 cup (+dash more if required) plant based milk

1 tbsp maple syrup 

1 tbsp Sun Potion Mucuna Powder

Halva Drizzle 

1 tbsp smooth white tahini 

1 tbsp maple syrup 

1-2 tbsp filtered water (+ more until consistency reached)

Baklava Crumb  

1 tbsp Pistachios (Roughly chopped)

1 tbsp chopped dates (dry - no need to soak in this recipe)

Method

Remove skins from ripened bananas and chop into bite sized pieces then place in freezer for 4-6 hours or until frozen

Remove the bananas from the freezer and blend while gently pouring in the maple and plant milk

Once smooth you can place back into the freezer for 1-2 before serving or serve immediately

For the halva syrup. Mix the two ingredients in a small bowl and slowly add in the water until desired consistency is achieved. Place to the side ready for plating. 

Finally, simply chop and mix the salted pistachio and chopped dry dates and sprinkle on top of your plated Mucuna banana nice cream.

Just before serving, drizzle with Halva syrup!
