I’m always trying to reinvent a healthier version of my old fashioned favorite sweet and savory treats.
With that being said, I often found myself buying pre-made treats at the store and being disappointed with how I felt afterwards — not quite myself.
It’s hard to find good alternatives. If you find a product close to it and think you’re winning with that, I usually find there’s something else in it that they added that was unnecessary.
So now what? Am I supposed to give up my favorite guilty pleasures?!
No! So I figured out what I like, went back to nature’s source and recreated the version without all of the weird stuff. AND I’ve been able to elevate these recipes even further by using Sun Potion’s adaptogenic powders, which slot easily into a daily routine and also add a nice nuttiness and fluffy texture to the mix. This recipe leans on Lion's Mane and Mucuna Pruriens, two herbs traditionally used to support focus and a bright, steady mood. I also add Sun Potion Tocos to everything, because it really does add the perfect smooth texture to drinks, dressings and baked goods, and it is naturally rich in vitamin E.
Adaptogenic Banana Muffins
Ingredients1 box gluten-free vanilla cake mix 1 banana 2 eggs 1 tbsp. vanilla extract 1/3 cup water 1/3 cup (melted) butter or coconut oil 1 tsp. cinnamon 3 tbsp. Sun Potion Tocos 2 tsp. Sun Potion Mucuna Pruriens 2 tsp. Sun Potion Lion's Mane |
MethodPreheat oven to 350° F In a bowl add mashed banana, eggs, vanilla extract, water and butter, then whisk. To the same bowl, add Sun Potion Lion's Mane, Sun Potion Mucuna Pruriens, Sun Potion Tocos and the cake mix, then whisk. Line a cupcake/muffin tin with muffin liners (parchment paper). This recipe can make 6-12 muffins depending on how large you want them (6 jumbo or 12 smaller). Scoop mix into your muffin tin. Top with a sliced banana if you like bananas, and a little salt on the tops before popping in the oven. Bake for 25 mins (until tops are slightly golden). Important tip: turn off the oven and let them sit inside to cool — this ensures the middle is cooked and doesn’t crumble, since these are gluten free. Serve room temp & enjoy! |
