STRAWBERRY ROSE CHEESECAKE BREAKFAST BROWNIES

Strawberry Rose Cheesecake Breakfast Brownies (paleo/vegan)

With some hidden veggies, functional mushrooms and adaptogens, and a good dose of hemp-derived protein, these paleo and vegan Strawberry Rose Cheesecake Breakfast Brownies certainly qualify as a nourishing way to start your day.

Love-inspired ingredients used:

Pine Pollen: A nutrient-dense tonic herb, traditionally valued as a nourishing daily ally.

Cacao: Love for your overall sense of well-being. (You can use carob too, if cacao does not suit you.) Think contentment and overall relaxation.

Mucuna: Traditionally valued for supporting mood, mental clarity and a settled nervous system — some major love for your overall well-being.

Hemp: A complete protein source with a high omega-3 fatty acid profile — one big loving hug to your heart.

Coconut Yogurt: Some love to your friendly gut bacteria.

Cauliflower: A brassica, and a sneaky way to get more vegetables into a brownie.

Spinach: As a dark leafy green, it's filled with nutrition to love and support your over-all well-being.

And of course, food is not just about the nutrients within, it’s about how you enjoy it and who you enjoy it with. Take your time, savor, chew slowly, and above all, relish the process of loving and nourishing yourself!

For the Hemp Breakfast Brownies

Ingredients

3/4 cup chocolate hemp protein powder (or favorite chocolate protein)

1 tsp. Sun Potion Mucuna Pruriens

1/2 tsp. baking soda

1 tsp. apple cider vinegar

1/4 cup raw cacao powder

1 cup pureed veggies*

2 flax eggs (I did 2 tbsp. flaxseed with 3 tbsp. water)

1/2 tsp. salt

sweetener to taste (I added about 1/2 tbsp. monk fruit)

* I used a mixture of cauliflower/spinach/zucchini with 3 tbsp. water to blend, but feel free to just use one

Method

Pre-heat oven to 350 F degrees

Mix all the ingredients in a bowl (it will be thick and dense)

Grease tray or individual ramekins with oil and bake for 20-25 minutes (I used a silicone muffin/cupcake tray greased with coconut oil)

Let cool

For the Strawberry Rose Cheesecake

Ingredients

1 cup activated cashews

1/2 cup coconut yogurt (I used a vanilla coconut yogurt)

1/2 cup cauliflower (I used steamed cauliflower rice)

1 cup frozen strawberries that have been thawed

1 tbsp. lemon juice

1-2 tbsp. Sun Potion Rose Water (depends on your taste)

1 tsp. Sun Potion Pine Pollen

2 tbsp. coconut oil

Sweeten to taste (my coconut yogurt was sweetened, so I used none)

pinch salt

Method

Blend all the ingredients in a high speed blender

Pour mixture into baking dish or individual ramekins (I used a coconut oil greased silicone muffin/cupcake tray)

Pop in freezer until firm (about 2 hours)

Layer cheesecake onto the brownies and enjoy!

*I store both separately in the refrigerator. the cheesecake will turn into a mousse/frosting texture
