RAW CACAO REISHI BROWNIES

While quarantining in Paris, I tried to use this time alone to become more connected with my inner self. Feeding my soul properly is a huge part of my daily life: good sleep, hydration, meditation, books and of course food. As a chocolate lover, I refused any kind of label for my diet. I eat intuitively. This recipe is rich in nutrients like Omega-3s with almond butter and almond flour, and is also rich in antioxidants, polyphenols and magnesium (in the raw cacao). It is made with Reishi, a functional mushroom traditionally used to support balance and overall well-being.

Raw Cacao Reishi Brownie

Ingredients

1 cup of almond flour*

1 cup of medjool dates

½ cup of raw cacao powder

1 tsp. Reishi powder

¼ tsp. pink Himalayan salt

½ cup almond butter

1 tbsp. melted coconut oil

* You can use any nut flour you like; my favorites are: almond flour, hazelnut flour, pecan flour and walnut flour.


Method

Add the dates and process until a sticky mixture forms. The brownie mixture should easily stick together when you press it with your fingers. If it's not sticky enough and the mixture doesn't hold together, add more dates.

In a large bowl add and mix the dry ingredients: almond flour, cacao, Reishi and salt.

Press the mixture into an 8" x 8" (20 cm x 20 cm) dish lined with parchment paper. If the brownie mixture sticks to your hands, wet your hands. Once evenly pressed, place the brownies in the freezer for about 10-15 minutes.


The Yummy Note...

In a small bowl mix some melted coconut oil, a teaspoon of raw cacao powder, a pinch of salt and a teaspoon of coconut syrup. Mix and add on top of the brownies for an extra layer of goodness...
