I’m always trying to reinvent a healthy version of my old fashioned favorite sweet and savory treats.
With that being said, I often found myself buying into pre-made treats at the store and being disappointed with how I felt afterwards, not only physically from digestion issues but also mentally foggy, lethargic and just not myself.
It’s hard to find healthy alternatives. If you find a product close to it and think you’re winning with that, I usually find there’s something else in it that they added that was unnecessary.
So now what? Am I suppose to give up my favorite guilty pleasures because I don’t want to sacrifice my mental and physical health?!
No! So I figured out what I like and I’ve gone back to nature's source and recreated the version with out all of the weird stuff! AND I’ve been able to elevate these recipes even further by using Sun Potion's adaptogenic powders that not only get incorporated into your daily routine for added health benefits, but also add a nice nuttiness and fluffy texture to the mix. Medicinal Mind Power Banana Muffins
1 box of Swerve Sweets Vanilla Cake Mix
1 tbsp. vanilla extract
1/3 cup water
1/3 cup (melted) butter or coconut oil
1 tsp. cinnamon
3 tbsp. Sun Potion Tocos
2 tsp. Sun Potion Mucuna Pruriens
2 tsp. Sun Potion Lion's Mane
Preheat oven to 350° F
In a bowl add mashed banana, eggs, vanilla extract, water and butter >> whisk.
Line cupcake/muffin tin with muffin liners (parchment paper).
This recipe can make 6-12 muffins depending on how large you want them (6 jumbo or 12 smaller).
Scoop mix into your muffin tin.
Top with a sliced banana if you like bananas and salt to tops of muffins before popping in oven.
Bake for 25 mins (until tops are slightly golden).
Turn off oven, let sit in oven to cool to ensure middle is cooked and doesn’t crumble since these are gluten free!
Serve room temp & enjoy!
