MESSY REISHI PB&J CUPS


Easy to make and even easier to enjoy, these treats will take you back to childhood days of peanut butter and jelly sandwiches, now elevated with mood and immune boosting ingredients like Reishi Mushroom and Raw Cacao!

To all the chocolate lovers! These are the perfect chocolate fix, snack, or just because and their super easy to make!

I love including Reishi in my daily life to improve the immune system, for it’s high levels of antioxidants and I just truly love the flavor. So when I wanted to create these PB&J cups I thought that Reishi and Cocoa would complement each other and work wonderfully together to make the cups even better. These two are the perfect pair because cocoa is a great carrier for Reishi, allowing our bodies to get all the amazing benefits from both.

 

Reishi PB&J Cups

 Ingredients

(4 servings)

Chocolate 

1/2 cup raw cacao

1/4 cup coconut oil (melted)

1/4 cup maple syrup

1/2 tsp. Reishi

pinch of sea salt

4 tsp. natural peanut butter 

Chia Berry Jam 

1/3 cup mixed berries

1 tsp. chia seeds

 

 Method

Start by making the chocolate, combine all the chocolate ingredients into a small bowl and mix (wait to add peanut butter)

Put liners into muffin tens or lightly grease with coconut oil, then add one tablespoon of the chocolate mixture into three muffin tens and place into the freezer for about 5 minutes

Once first layer of chocolate is solid, add one teaspoon peanut butter and one teaspoon chia jam (method below) then add the remaining chocolate mixture on top and place back into the freezer to set for about 20 minutes or until solid

Remove and enjoy! 

Chia Berry Jam 

In a small pan, combine the berries and chia seeds and let simmer on low heat until you have a jam like consistency

Remove from heat and let sit until you are ready to use
