MESSY REISHI PB&J CUPS

To all the chocolate lovers! These are the perfect chocolate fix, snack, or just because — and they're super easy to make.

I love including Reishi in my daily life for its deep, slightly bitter flavour and its antioxidants. So when I wanted to create these PB&J cups I thought that Reishi and cacao would complement each other and work wonderfully together. These two are a natural pair — cacao is a great carrier for Reishi, and the bitterness of each rounds the other out.

Reishi PB&J Cups

Ingredients

(4 servings)

Chocolate

1/2 cup raw cacao

1/4 cup coconut oil (melted)

1/4 cup maple syrup

1/2 tsp. Reishi

pinch of sea salt

4 tsp. natural peanut butter

Chia Berry Jam

1/3 cup mixed berries

1 tsp. chia seeds

Method

Start by making the chocolate — combine all the chocolate ingredients in a small bowl and mix (wait to add the peanut butter).

Put liners into muffin tins, or lightly grease with coconut oil, then add one tablespoon of the chocolate mixture into each and place in the freezer for about 5 minutes.

Once the first layer of chocolate is solid, add one teaspoon of peanut butter and one teaspoon of chia jam (method below), then add the remaining chocolate mixture on top and place back in the freezer to set for about 20 minutes, or until solid.

Remove and enjoy!

Chia Berry Jam

In a small pan, combine the berries and chia seeds and let simmer on low heat until you have a jam-like consistency.

Remove from the heat and let sit until you are ready to use.

A note from Sun Potion on Reishi

The Reishi mushroom has been valued as a food and a tonic for over 2,000 years, beginning in ancient Asia. Its scientific name is Ganoderma lucidum; it is called lingzhi in Chinese, and reishi or mannentake in Japanese. Images of the reishi mushroom appear in ancient art from these cultures, and it has been written about since early times. Before cultivation it was difficult to obtain because of its rarity, which gave it even more notoriety.
In Traditional Chinese Medicine, Reishi is classed as a Qi tonic and a Shen herb — traditionally associated with a settled mind and a calm spirit, which is why it is often called the queen of mushrooms.
Sun Potion's Reishi consists of the mushroom's fruit body, primordia, spores and extracellular compounds.

Frequently Asked Questions

Do these need baking?

No — they set in the freezer in about 25 minutes total, in two layers.

What does Reishi taste like with cacao?

Reishi is bitter and earthy, and raw cacao is too. Together they read as dark chocolate rather than as mushroom.

Can I use a different nut butter?

Yes. Almond or cashew butter both work — peanut butter is what makes it read as PB&J.

How should I store them?

In the freezer. They soften quickly at room temperature, which is where the "messy" comes from.
