Easy to make and even easier to enjoy, these treats will take you back to childhood days of peanut butter and jelly sandwiches, now elevated with mood and immune boosting ingredients like Reishi Mushroom and Raw Cacao!

To all the chocolate lovers! These are the perfect chocolate fix, snack, or just because and their super easy to make!

I love including Reishi in my daily life to improve the immune system, for it’s high levels of antioxidants and I just truly love the flavor. So when I wanted to create these PB&J cups I thought that Reishi and Cocoa would complement each other and work wonderfully together to make the cups even better. These two are the perfect pair because cocoa is a great carrier for Reishi, allowing our bodies to get all the amazing benefits from both.

Reishi PB&J Cups

(4 servings)

1/2 cup raw cacao

1/4 cup coconut oil (melted)

1/4 cup maple syrup

1/2 tsp. Reishi

pinch of sea salt

4 tsp. natural peanut butter

Chia Berry Jam

1/3 cup mixed berries

1 tsp. chia seeds

Start by making the chocolate, combine all the chocolate ingredients into a small bowl and mix (wait to add peanut butter)

Put liners into muffin tens or lightly grease with coconut oil, then add one tablespoon of the chocolate mixture into three muffin tens and place into the freezer for about 5 minutes

Once first layer of chocolate is solid, add one teaspoon peanut butter and one teaspoon chia jam (method below) then add the remaining chocolate mixture on top and place back into the freezer to set for about 20 minutes or until solid

Remove and enjoy!

Chia Berry Jam

In a small pan, combine the berries and chia seeds and let simmer on low heat until you have a jam like consistency

Remove from heat and let sit until you are ready to use

A note from Sun Potion on Reishi

The Reishi mushroom has long been used as a healing food for the body and spirit, beginning over 2000 years ago in ancient Asian countries. Its scientific name is Ganoderma lucidum and is called lingzhi in Chinese, and reishi or mannentake in Japanese. Images of the reishi mushroom have appeared in ancient art from these cultures and its medicinal properties have been documented from early times as well. Before cultivation, it was a difficult mushroom to attain because of its rarity, which gained it even more notoriety. Its therapeutic benefits and tonifying effects include enhancing vital energy (known as Qi in Chinese), strengthening heart function, increasing energy, and longevity effects. A Chinese pharmacopoeia lists its benefits as: a replenisher of Qi, ease the mind and relieve cough and asthma, and is recommended for dizziness, insomnia, palpitation, and shortness of breath. (Click here for a longer version of its health benefits and history).
In short, this wonderful mushroom may provide immune support, longevity, and stress relief, while pacifying your spirit and nourishing your heart. Sun Potion's Reishi consists of the mushroom's fruit body, primordia, spores, and extracellular compounds, for maximum potential benefits.
